Banana-Nut Crumble Muffins

What better way to use those bananas than to make a muffin out of them?! These crumble muffins are to die for. Paired perfectly with a cup of coffee, or a tall, refreshing glass of milk! These are guaranteed to make you feel warm and fuzzy.

Ingredients

  • 1 1/2 cups all purpose flour
  • 3/4 tsp. cinnamon
  • 1 teaspoon baking powder
  • 1 tsp. baking soda
  • 1/4 tsp. salt
  • 3 ripened bananas
  • 2/3 cup sugar
  • 1 egg
  • 1 tsp. real vanilla extract
  • 1/2 cup butter
  • ---Crumble Topping
  • 1/3 cup brown sugar, packed
  • 2 tbsp. flour
  • 2 tbsp. butter
  • 2 tbsp. oats
  • 1/3 cup chopped pecans
  • ---Cream Cheese Drizzle
  • 4 oz. cream cheese, softened
  • 1/4 cup butter, softened
  • 1 tsp. pure vanilla extract
  • 1 cup powdered sugar

Preparation

    Preheat oven to 375 degrees.

    Coat muffin pan with cooking spray or lightly butter.

    Combine flour, cinnamon, baking soda, baking powder, and salt in a large bowl, set aside.

    In a separate bowl, mix bananas, sugar, egg, vanilla and butter.

    Slowly add flour mixture to banana mixture, mixing until just blended.

    Fill muffin tin 3/4 of the way full with blended mixture.

    In a small mixing bowl, combine flour, brown sugar and butter until just mixed.

    Stir in oats, and pecans.

    Divide topping amongst the muffin tin.

    Bake for 18 minutes, or until a toothpick comes out clean.

    Combine cream cheese, butter, vanilla extract, and powdered sugar, mix until smooth.
