Piña Colada Mix

Do you like piña coladas? Well I think I would, but I am allergic. So when my husband requests pineapple, I may or may not be slightly jealous. I always give in, and make him the fruity concoction, with envy in my heart. We are stuck in the house in quarantine, but nothing bothers him after a few of these bad boys, not even my begrudging mannerisms.

You may also serve this mixture to the kids, minus the alcohol!

Ingredients

  • 2 cups of pineapple chunks
  • 1 can of coconut cream
  • 2 Tbsp. shredded, sweetened coconut
  • 1/2 banana
  • 1/2 cup of pineapple juice
  • 2 1/2 cups of ice
  • Rum (optional)

Preparation

    Throw all ingredients in a blender, and blend until smooth.

    Pour 1 1/2 oz. of white rum into a glass, then pour colada mixture in glass, and stir well.

    Garnish with a pineapple chunk or cherry.
