Details

  • Preparation Time: 1 week
  • Cuisine: American

Ingredients

  • 1 cup of whole wheat flour
  • 1/2 cup of cool water

Preparation

  • 1
Mix together the water and flour in a glass jar (I use a large, lidded mason jar).
  • 2
Cover the jar and let it sit at room temperature (70 degrees) for 24 hours.
  • 3
After 24 hours, begin to feed the starter by discarding all but 1/2 cup (the discard can be composted or thrown out, or used in a recipe calling for sourdough discard).
  • 4
With the remaining 1/2 cup, mix in another 1 cup of flour and 1/2 cup of lukewarm water.
  • 5
Cover and repeat every 24 hours.
  • 6
Starter will begin to activate and you will see it bubbling. After the starter is activated, begin feeding it twice a day (every 12 hours).
  • 7
Repeat this for at least a week before using in any recipes.
