Mermaid Cupcakes (Vanilla)

I made these vanilla cupcakes for my son’s teacher’s birthday, and the kids, and parents went crazzzy! These cute little cupcakes were a total hit, even though I had to hit the brakes and half of the cupcakes flew across my car. Major crisis here, so if you have to transport these cupcakes, make sure they are secured tightly and out of the sun! The cupcake frosting will melt in the sun so these two factors are extremely important, when transporting. Nevertheless, the kids didn’t care if the cupcakes looked a little funny…they still tasted great! HA! These cupcakes are absolutely delicious, and are really fun to make. So much everyone wanted seconds, so make sure you make extra cupcakes!

Ingredients

  • 1 1/2 cups of all purpose flour
  • 1 1/4 tsp. of baking powder
  • 1/2 tsp. of salt
  • 3/4 cup of unsalted butter (room temperature)
  • 3/4 cups of sugar
  • 2 eggs (room temperature)
  • 2 tsp. of vanilla extract
  • 1/4 cup of buttermilk (room temperature)

Preparation

    Preheat oven to 350 degrees

    Combine flour, baking soda, and salt in a separate bowl and set aside.

    Combine butter and sugar in a stand mixer bowl, and beat until fluffy.

    Add eggs one at a time until throughly combined.

    Add vanilla until combined.

    Reduce mixer speed and slowly alternate buttermilk and flour mixture by spoon until completely combined.

    Spray cupcake tin with non stick spray, and line tray with cupcake liners.

    Once batter is mixed, fill cupcake liners 3/4 of the way full. DO NOT OVERFILL!

    Bake cupcakes for 20 minutes or until a tooth pick comes out clean.

    Let cupcakes cool in the pan for a few minutes, then transfer to wire rack.

    Let cupcakes cool completely before icing. Do not try to frost cupcakes while warm or you will have a melted mess on your hands!

    Once completely cooled, frost the cupcakes and have fun! Get creative!

    *To get the multi colored frosting affect, lie plastic wrap down and pipe each color of frosting in vertical lines, and gently wrap. Then using a piping nozzle/bag, and decorate!

    Spray with edible glitter for extra fancy cupcakes!
